About penne pasta

It is a type of pasta in the shape of a hollow tube with a diagonal cut. The origin of the word in Latin means “feathers” or “feather”. This is because the shape of the pasta is reminiscent of a feather pen. The origin of the pasta is the region of Calabria in southern Italy.

In Italy there are two main versions of penne. The first type is penne lisce (smooth). The second type of penne is penne rigate (Or as it is commonly called – Rigatoni). This has a more rough texture. It is grooved with small plowed ridges. The word rigata in Italian means notched.

Another version of penne is called a pennoni, which is just a wider version of the regular penne.

The same or similar shape is called “mostaccioli”. It is named after mosto tiroche- this is actually a version of a smooth and not grooved penne in its texture and the ends of its tubes are cut into a rhombus.

There are also ziti visits, named after the word grooms in Italian. It is hollow, short, and bent to the shape of the letter c in a smooth texture as well,

And lastly – the zitoni, a kind of thick version of the ziti.

It is usually customary to cook penne to the level of al dente only, and serve it with pasta sauces such as pesto or tomato sauce. Penne is a great pasta to eat with sauces because of its shape. It has a hollow center that allows it to hold a sauce.

Preparation:

Fill the pot with water and bring to a boil, add a pinch of salt and cook the penne for about 2-3 minutes. It is recommended to prepare the pasta when the sauce is ready and then just add the penne to the sauce.

Put the butter in a wide pan, as soon as it melts add the flour, mix well, and thicken the sauce. Add the cream and mix with a whisk. Then, add the rest of the sauce ingredients. Add salt to taste.

Preparation of the dish:

Heat a frying pan, add the butter and sauté the salmon cubes.

Add the garlic clove, the alfredo sauce and cook for about 3 minutes.

Then, add the chives, parsley, and lemon zest.

Lastly, add the penne to the sauce and serve.
